Beetroot Brownies

ingredients

  • 300g cooked beetroot
  • 150g dark chocolate, melted
  • 1 egg
  • 2–3 tbsp honey, or to taste
  • 100–150g oat flour or almond flour
  • A handful of chocolate chips


Method:

  1. Blend the beetroot and egg
  2. Add the beetroot and egg to a blender and blend until smooth.
  3. Mix the ingredients
  4. Transfer the beetroot mixture to a bowl. Add the honey, flour and melted dark chocolate. Mix well until everything is combined and you have a thick brownie batter.
  5. Add the chocolate chips
  6. Fold the chocolate chips into the mixture.

 

Bake:

Transfer the batter to a lined baking tray or brownie tin and spread evenly.

Bake at 180°C for around 20 minutes, or until the brownies are set around the edges but still slightly soft in the middle.

Cool and slice

Allow the brownies to cool before cutting into squares.
